Yorkshire Pudding

(Serves 6-8 people)



Ingredients

15 mL (1 tbsp) Oil
150 mL (¾ cup) Pan drippings from prime rib
2 Eggs, large
250 mL (1 cup) Milk
250 mL (1 cup) All-purpose flour
2.5 mL (½ tsp) Salt
Pinch McCormick Gourmet Collection™ Nutmeg
   

Method
  1. Preheat a toaster oven to 230ºC (450ºF).
  2. Oil a 22.5 cm x 22.5 cm (9 x 9 inch) pan. Add beef drippings and place pan into the oven for about 5 minutes, or until oil starts to smoke.
  3. Using a hand mixer, combine eggs and milk. Sift in flour, salt and nutmeg. Mix batter until extra smooth.
  4. Reduce oven temperature to 200ºC (400ºF) and carefully remove the pan with beef drippings.
  5. Immediately add the batter to the pan and place back into the oven. Bake Yorkshire pudding 25-35 minutes, depending on the type of pan used.
  6. Remove from the oven; carefully drain any remaining oil in the bottom of the pan. Turn pudding out onto a cutting board and cut into portions.
  7. Serve hot.
