Pesto Shrimp
(Makes 4-6 Servings)Ingredients
| 125 mL (½ cup) | Basil pesto (see recipe) |
| 450 g (1 lb) | Shrimp, large, peeled and deveined |
| 90 mL (3 oz) | White wine |
| 5 mL (1 tsp) | Lemon juice |
Method
- In an electric skillet, heat pesto over a medium-high heat.
- Add the shrimp, wine and lemon juice. Cook the shrimp stirring constantly for 2-3 minutes until the shrimp just turns pink. Serve immediately.
- Serve over rice or with a sliced baguette.
