Pesto Shrimp

(Makes 4-6 Servings)





Ingredients

125 mL (½ cup) Basil pesto (see recipe)
450 g (1 lb) Shrimp, large, peeled and deveined
90 mL (3 oz) White wine
5 mL (1 tsp) Lemon juice
   

Method
  1. In an electric skillet, heat pesto over a medium-high heat.
  2. Add the shrimp, wine and lemon juice. Cook the shrimp stirring constantly for 2-3 minutes until the shrimp just turns pink. Serve immediately.
  3. Serve over rice or with a sliced baguette.
