Quinoa with Golden Raisins, Pecans and Scallions
(6 servings)Ingredients
| 250 mL (1 cup) | Quinoa, soaked in running water for 20 minutes |
| 500 mL (2 cups) | Water |
| 2.5 mL (½ tsp) | Salt |
| 15 mL (1 tbsp) | Butter |
| 90 g (3 oz) | Golden raisins |
| 60 g (2 oz) | Toasted pecans, chopped |
| 125 mL (½ cup) | Scallions, white and green, thinly sliced |
| To taste | McCormick Gourmet Collection™ Kosher Salt |
| To taste | McCormick Gourmet Collection™ Ground Black Pepper |
Method
- Using a rice cooker, cook quinoa in water and salt. Remove and cool.
- Preheat an electric skillet to 180ºC (350ºF).
- Melt butter in hot skillet. Add cooked quinoa and golden raisins. Stir until quinoa has heated thoroughly.
- Once quinoa has reheated, add toasted pecan pieces and scallions. Season with salt and pepper to taste.
- Serve hot.
